Breakfast Nachos

I talk a lot about this dish on twitter and have been asked more than once what Breakfast nachos are. Quite simply, I was bored of putting my scrambled eggs in a wrap so one day I ate them with tortilla chips! It was so yummy that I started experimenting with my own version of Breakfast Nachos!

6 scrambled eggs

Diced green peppers

Diced onions
Tortilla Chips

Sliced Green Onions

Grated cheese
Use either Chopped Bacon, Ground Mild Italian Sausage or both!


1.
If using bacon, cook using your preferred method. Let it cool before chopping it into pieces

2. Fry onions and peppers in the oil from the bacon or sausage. Drain. Return pan to stove and add eggs.

3. Scramble, adding the seasonings you prefer

4. Once the eggs are cooked, add meat, top with cheese and cover.

5. Remove from the stove so your eggs don't get overcooked.

6. Place Tortilla Chips in a serving dish. Top with egg mixture and garnish with green onions. Serve with Salsa on the side and VOILA! The texture and flavours of this dish are simply superb!
